I have not been to Daytona, so I can not give you a for sure answer. Usually I do believe that there are scheduled times that you can go and come from the infield via the tunnel. I have no idea how much of a hassle that would be, so my suggestion is to bring what you need with you when you get there.
I want to do the same thing at Atlanta in the spring, so maybe we can help each other out with some info.
